Processing begins right after harvesting and is one of the most important stages in the coffee chain, as it largely defines the flavor, aroma, and final quality of the beverage.

Although it can vary depending on the method used, processing usually includes the following phases:

  • Pulping: the pulp is removed from the cherry to extract the bean.

  • Fermentation: a controlled process that helps eliminate mucilage and develop sensory profiles.

  • Washing: cleaning the bean after fermentation (in washed methods).

  • Drying: reducing the moisture of the bean to an optimal level for storage.

Importance of Processing
