Método de filtrado V60

V60 filtration method

When it comes to specialty coffee, the V60 is one of the most iconic and beloved methods by baristas and coffee lovers around the world. With its simple yet ingenious design, it achieves a clean, aromatic, and nuanced cup.

At Café La Manchuria, we consider it one of the best ways to highlight the unique characteristics of each of our coffees. Today, we'll tell you its history, how it works, and how you can master it at home.

What is the V60 method?

The V60 is a filter coffee brewing device created by the Japanese company Hario in 2005. Its name comes from the “V” shape and the 60-degree angle of its walls, designed to optimize water flow during extraction.

It is characterized by:

  • Conical shape , which favors the concentration of water in the center.
  • Internal spirals , which allow the uniform expansion of the ground coffee.
  • Wide opening at the base , giving control over the filtration speed

Why is it so popular in specialty coffee?

The V60 allows complete control over the extraction process: water temperature, pour time, speed, and ratio. This results in a cup that accurately reflects the coffee's profile, highlighting floral, fruity, or sweet notes depending on the origin and roast.

In short:

If the coffee is good, the V60 will make it shine.

If the coffee has defects, the V60 will also show them.

Basic guide to preparing coffee in V60

For a perfect cup, follow these steps:

What you need:

  • V60 and paper filter.

  • Freshly ground coffee (medium-fine ground).

  • Filtered water at 90–96 °C.

  • Scale and stopwatch.

Step by step:

  1. Rinse the filter with hot water to remove papery flavors and preheat the V60.

  2. Add the coffee (e.g. 15g to 250ml of water, ratio 1:16).

  3. Blooming: Pour twice as much water as the amount of coffee (30 ml) and wait 30 seconds to release gases.

  4. Spiral Pour: Add the remaining water slowly, in circles from the center outward and back to the center.

  5. Total time: Between 2:30 and 3:30 minutes for a balanced extraction.

V60 cup profile

  • Clarity: High, ideal for highlighting bright acidity and delicate notes.

  • Body: Light to medium.

Flavor: Clean, defined, with well-differentiated nuances.

We believe the V60 is not just a method, but a sensorial experience that invites you to enjoy coffee calmly, observing every step and appreciating every aroma that emerges. At Café La Manchuria, we'd be happy to prepare it for you and teach you how to master it so that each morning begins with the clarity and elegance that only this method can offer.
